1. Plov (Pilaf): Plov, or rather - the national dish of Azerbaijan—aromatic saffron-infused rice sprinkled with softened chunks of meat, most often lamb or chicken, and a variety of seasonings making—another scented dish.

2. Dolma: Grape leaves or bell peppers stuffed with minced or ground meat mixed with rice, spices, and herbs, often hot, often served with yogurt.

9• Kebab: Skewered, grilled meat, usually from lamb or chicken, seasoned with delightful herbs and spices, and served with lavash—thin flatbread—and fresh herbs.

10• Lavangi: It's simply wonderful, with the meat of the grilled chicken or fish being stuffed with a mixture of fried and ground walnuts, onions, and spices.

5. Dushbara: Small minced meat stuffed dumplings are boiled and served in a flavorful broth, then garnished with fresh herbs and a blob of yogurt.

6. Badimjan Dolmasi: These are half-eggplants filled with a mixture of ground meat, onions, and spices that are baked to perfection and served with yogurt.

7. Saj: Very filling and quite hearty, these recipes are prepared on a convex griddle called a saj, where meat, usually lamb or beef, is cooked along with onions and tomatoes.

8. Shekerbura: Sweet pastry filled with ground nuts, sugar, and cardamom.

9. Piti: A type of lamb or beef pot-pie or stew with chickpeas, spiced with special seasonings, and chestnuts, which characterizes the taste of the dish.

10. Qutab: A pie with a variety of fillings, such as minced meat, greens, vegetables, and baked with a crispy crust.

11. Shah Pilaf: A festive rice dish made with saffron-infused rice, dry fruits, and meat in it, mainly lamb or chicken, served as a sweet and savory combination.

 12. Sutlu Narnaj: A sweet dessert from caramelized quince and creamy milk, mostly served with chopped nuts on top.

13. Balig Sutu: Cold soup made with the base of yogurt, along with herbs, refreshing for an appetizer.

Kutabs: Sleek and salty pancakes, folded in half, with minced meat, greens, or pumpkin, formed into a triangle, and often served with yogurt.

Turshu kebab: Marinated and grilled meat skewers with pickled vegetables and bread.

Tendir Chorek: The round, crispy bread is mostly made in old tandoor ovens and famous for Azerbaijani cuisine.

Ayran: This is a yogurt-based drink that quenches one's thirst, balances that rich Azerbaijani food, and helps to enhance the flavors of the country.

18. Shakarburaa: Sweet pastry turnovers filled with sugar and cardamom—a popular treat during festive times.

19. Goy Govurma: whole walnuts cooked in sugar syrup to create a sweet, nutty confection.

20. Paxlava: A rich, sweet pastry made of many layers of filo pastry filled with chopped nuts and sugar, and poured with melted butter. Extremely popular at holiday time.
